What ArduPilot says:

The switch “set trim to current servo and RC” (RCn_OPTION 155) was used in MANUAL. Plane took the present positions of the aileron, elevator and rudder outputs (and of elevons, V-tail, flaperons) as the new servo trims, and the present roll, pitch and rudder stick positions as the new RCn_TRIM. It is the way to carry a trim you flew with the transmitter's trim buttons over into ArduPilot.

After it, put the transmitter's trim buttons back to the middle before the next flight, or the trim is applied twice. SERVO_AUTO_TRIM 1 does the same job by itself during normal flight.
